Hey Linz just watched your last to videos. If you remember I am lactose Intolerent (flash back to me curled up on the floor at the sign in desk at Angela Hall during desk duty after pizza!) Lactaid milk is disgusting and I wouldn't wish it on anyone, however Organic Valley makes a lactose free milk that is pretty good, as in I can't tell a difference from it and regular milk (trust me, I have accidentally made hot chocolate with vanilla soy milk and thought I was going to die from the sweet and rather odd melted marshmallow flavor it produced).
Also fear not, you will be able to enjoy cheese (when you can) as long as it is aged over 60 days. The only types of cheese this rules out are fresh cheese like mozz, ricotta, brie etc. Most others are fine like cheddar, swiss, whatever else you like, are fine. I hope this is comforting and informative for you. In the end I hope that you don't need all this info, but if you do remember, you will figure out your dairy thresh hold and what triggers a more severe reaction. I can have a small amount of 1/2 & 1/2 in my morning coffee and no problem, but put some milk on my cereal and it's instant pain. Love ya and rooting for you every step of the way!
